Simple, yet decadent. Make your favorite pancake recipe (I love blueberry) and top each serving with maple syrup poached eggs. A big thanks to Scott (or, technically, his Mom!) for sharing his family Easter tradition. We love 'em!

Oh MG...made them tonight for supper...forget the vinegar and water attempt..this is no fail...perfect, beautiful and wonderful flavor (used real maple syrup and you don't need as much as you think..just enough to cover the bottom of a saute pan plus a titch extra. As ours were supper, served topping a pan fried Saltcod fish cake, with soft spring greens lightly dressed on the side and good ole Canajan baked beans.

Wow Brenda, So glad you already tired the eggs!! They are really good, aren't they?? We have maple syrup from a farm near us and it is so good! Since I'm vegetarian, I will pass on the fish, but the spring greens sound like they would go perfect!
